This month the whole gang is working on recipes inspired by Harry Potter!
I love me some butterbeer, but sometimes it can be a bit too sweet. I’m going to show you two other ways you can enjoy the flavor of butterbeer without feeling like your teeth might rot out of your head.
Butterbeer Energy Bites
I’m not much of a breakfast person, so these are great little snacks when you’re on the go. I used this recipe. I added more butterscotch chips than the recipe called for because I burnt the molasses mixture, so I was trying to make up for the bitterness.
Quick tip: Microwave in 20 second increments so you don’t burn the molasses mixture. If it looks more dry than syrupy it is starting to burn. You can mix in a little water to smooth it back out again.
I put mine in the freezer after rolling them just to help them set up and then stored them in a ziplock bag in the fridge.
These are a variation of shortbread thumbprint cookies. I used this recipe and just substituted chewy butterscotch candies in place of the caramel. I’ve seen other recipes do a butterscotch drizzle, but I chose to stick with the chocolate so they wouldn’t be cloyingly sweet.
